New Year’s Day was pretty laid back — fresh snow on the ground, video fireplace crackling, knitting in progress, and soup simmering on the stovetop. 

I like to have frozen meals in the freezer this time of year, and my freezer compartment of late hasn’t had too many options available. I prepped two varieties of soup and had them simmering at the same time. Homemade soup is healthy, filling, economical, and tasty. As you can see, I already sampled the chicken noodle. 😉

  1. Chilling out was pretty much all I've accomplished for about 4 days - thanks to the cold I caught from grandkids. The kids all tested negative before coming here on Christmas Day, so I'm confident it's not Covid, but I still feel crappy. Your soups look yummy and comforting.

  2. Oh nice! You'll be set for a little while. I love home made soup. Our weekend was damp (drizzle all day both days) and warm (60+). Now we'll be lucky if it gets to 30 and snow could happen. I cooked, napped, knit, stitched and read. It was a perfect weekend!

  3. Oh we were chilled alright as in sub zero cold. I am reading a book and crocheting a bit. We have vegetable beef soup in the freezer here. Back at home I have a refrigerator freezer packed with quick meals, we like to cook once and eat a number of times. I think I am going to invest in a vacuum sealer, Andy has one and it works great!

  4. Spent most of the day over in Lander. Holbie, Mark and Emily came up and we had a second Christmas. Even got Tyler to hold his niece.

  5. That was two days ago, right? I took down and put away all the Christmas decorations and that took much of the day. And we did a geocache so that was fun!

  6. That soup looks so good! We've been eating leftover Chinese take out since Friday and right now I have no idea what's for dinner. We're hiding in the basement at the moment from the trees coming down from the snow so I am guessing it won't be much of anything. At least we still have electricity.

  7. Yummy soup. I don't know why I rarely think to make it. Yours looks delicious. Last night we had scrambled eggs, with ham and cheese. Toast and strawberry jam. It was wonderful and just the thing on a cold winter night.

  8. We chilled all New Year Day... but cooked a turkey yesterday.. so I’m freezing leftovers and the broth I made ... love homemade soups!

  10. We were much too hot here 26C to be chilled out. Instead of cooking soup we were trying to keep cool in the shade, and eating cold ham and salad. It's always a good idea to have extra meals put away in the freezer, and I love making soup myself.
