Dwight's "Kitchen"

Justin W., Harold and Dwight M. Grand Lake, CO July 2019 The house we rented had a "cadillac" fire pit, and my nephew Dwight used it to prepare special meals and treats in his Dutch ovens. We also gathered there in the evening to enjoy s'mores. Vegetable Popularity

(click to enlarge) I thought this infograph on the most popular vegetable in each state was interesting. I have to agree that potatoes are definitely a popular vegetable in Wyoming - as in "Steak and Potatoes." I can't believe that broccoli is popular in so many states and that only one state (Idaho) has peas as a popular veggie. Do you think the vegetable selected to represent your state is correct?

Mountain "Eats"

Marilyn and Dwight Dutch oven cooking Dwight planned all the meals for our week on the mountain and did most of the cooking and grilling. On our first morning at the cabin, he prepared a sausage, potato, egg and cheese dish in a Dutch oven. It was yummy. Other dishes included grilled pork chops, grilled chicken, pan-fried fish (caught by the guys), biscuits and gravy, grilled potatoes with ham, grilled brats, French dip sandwiches (prepared by Maria and Marilyn), teriyaki steak and rice (prepared by Maria), and of course, S'mores. Lunches consisted of sandwiches and leftovers from previous meals. The cabin had a unique appliance - a Sunbeam microwave, oven, broiler, and toaster combo that was the size of a regular small microwave. It worked perfectly and didn't take up much room in the kitchen. We ate well and plainly didn't want for tasty meals. Thanks for being our chef, Dwight

Veggetti - a review

 Zucchini "noodles" I've debated purchasing a Veggetti for over a year, but when Kmart had one at a reduced price ($11), I bought it. Veggetti has quickly become an indispensable kitchen gadget, as it makes either thick or thin noodles. The photo above shows the thick option. Zucchini "noodles" are now a favorite snack either raw or tossed with a bit of Walden Farms (no calorie) Sesame Ginger dressing, which gives the noodles a slightly oriental taste similar to stir fry. The instruction/cookbook that was in the package suggests using zucchini, yellow squash, cucumbers, carrots, and potatoes. I tried an English cucumber (it was more watery), but I didn't like it as well as zucchini. I doubt that I will ever use the device for potatoes; however, it looks like it making hash brownies would be pretty easy. The Veggetti is extremely easy to use and doesn't create a mess. Cajun Feast

Stirring the pot of boiling crawfish, potatoes, corn, and sausage Saturday evening I attended a crawfish boil with my sister and brother-in-law - the second time I've been privileged to experience this typical Cajun meal with them. The first time, a few years ago, I was clueless how to peel or even eat the crawfish. Spreading the steaming meal on a paper-covered table Our hosts (the man in the apron and the woman in the pink sweater) taste the first crawfish  A tasty cajun meal.  Yes, I definitely went back for more.
