Devil's Food

My knitting group met last night, and one of the women brought cupcakes to celebrate three members birthdays - Bea R., Colleen J., and mine.

It wasn't until after we had all enjoyed the cupcakes that she told us her secret: the cupcakes were healthy. She had used a recipe from Jessica Seinfeld's book Deceptively Delicious. The moist, devil's food cupcakes were made with an avocado puree, and the cream cheese frosting contained cauliflower puree. These treats were delicious, deceptively delicious, without even a hint of the healthy ingredients. Thank you, NJ for the treats.

This morning, I was shocked to find a birthday greeting on Renna's blog, Finding My Knitch. Thank you for making my day special, Renna.

  1. I think she was wise to wait until after everyone had eaten the cupcakes to tell what was in them. I like avocado and cauliflower, but those ingredients don't sound like something that would taste good in cake or icing. I'll take your word for it though.

  2. I think I would like them. I have a recipe for tomato soup cake and saurkraut cake, that is very good. One taste like a spice cake and the other like a coconut.
    I have substituted apple sauce for oil in recipes and they turn out fine. I think I will check that book out. Jerry Seinfeld's wife, right?

    The tomato soup cake is a nice moist spice cake. Try adding chopped walnut.

  4. Happy Birthday Nancy, I was visiting Renna and saw her Birthday greeting to you. I don't knit, but I wish I could so every now and then I go and check out different crafts that women make. The only thing that I can do with yarn is make Leis here in Hawaii using straws lol.

  6. Belated happy birthday! I don't quite know how I got to your blog, but I am so glad I came. I read quite a few of your posts, and just thought how wonderful you are! I had a tiny premature baby that needed a little hat...oh my, I just remember it so vividly, my tiny, tiny son with his little hat! Not only are the hats so important for the babies, but they also mean so much for us Moms...thank you!!! I love your blog and will be back!
